Recipe Ingredients for Red Pepper Pesto

3 red bell peppers
1 tablespoon pine nuts
1 garlic clove, smashed
1/4 cup basil
1/4 cup extra-virgin olive oil
1/2 cup grated pecorino cheese
2 tablespoons basil, chopped

Recipe Directions for Red Pepper Pesto

  1. Char the red peppers, then place in a bowl with plastic wrap to cool.

  2. Toast the pine nuts

  3. Place the skinless peppers, pine nuts, garlic and basil in a food processor, and process briefly till combined.

  4. Add the olive oil and cheese and process till a chunky pesto forms.

  5. Serve on pasta or toasted bread.
