Delicious warming Vegetarian Soup with a kick! I add a generous pinch of Basil, a pinch of dried chillies and a couple of teaspoons of Paprika. 15 grams is one and half vegetable stock cubes use what ever lentils I have to hand today it was little orange coloured ones. The water in this recipe is measured in the empty tomato can, so for each can of tomatoes add a can of water.

Recipe Ingredients for Red Pepper, Lentil and Tomato Soup

20 grams Stock Cube
210 grams Onion
300 grams Red Pepper
820 grams Canned Tomatoes
820 grams Water
100 grams Celery
34 grams Lentils
150 grams Zucchini
50 grams Carrot

Recipe Directions for Red Pepper, Lentil and Tomato Soup

  1. Finely chop the pepper, onion and celery. Chop the canned tomatoes

  2. Put all the ingredients in a pan, bring to the boil and simmer for 20 minutes

  3. Serve
