Salad or Vegetable Accompaniment

Recipe Ingredients for Red Pepper & Green Bean Salad

2 medium (approx 2-3/4" long, 2-1/2" dia) Peppers, Sweet, Red
6 clove Garlic
500 grams Beans, Snap, Green
1 tbsp Olive Oil
1 tsp Salt
1 tsp Pepper, Black

Recipe Directions for Red Pepper & Green Bean Salad

Halve and de-seed the red pepper. Place these and the garlic cloves cut into slices in an oven proof dish and drizzle with half the oil and seasoning. Bake in the oven for approx 20 minutes. Cut the green beans or better if you have them, slice runner beans. Blanch the beans in boiling water until just tender. Drain and add the vinegar with the rest of the oil and seasoning. Cut the pepper into bite sized pieces and combine everything in a serving bowl. Can be served hot with chicken etc or cold as a salad dish.
