taken from covent garden soup book recipe - this is absolutely delicious and actually tastes like tomato soup - but nicer. Don't try making this with green peppers (tastes disgusting and not sweet enough)

Recipe Ingredients for red pepper and goats cheese soup

8 red peppers
1 medium cooking apple
2 medium onions
150 g goat cheese
2 pint water
2 tsp dried basil
1/8 pint white wine
4 vegetable stock cubes

Recipe Directions for red pepper and goats cheese soup

  1. core and deseed all peppers and apple chop up

  2. dice onions (boil in white wine until reduces and the onions go brown but not burn)

  3. sling everything except the goats cheese into a big pan on the stove and boil the bum off of it until peppers go soft or for 30mins blitz in blender, pour back into the pan.

  4. Cut all rind of the goats cheese if has rind then chop up the soft gooey bit and melt into the soup then serve
