Recipe Ingredients for Red Pepper Cream Pasta

12 oz whole wheat pasta, uncooked
5 tomatoes
5 red bell peppers
40 g almonds
40 g breadcrumbs
20 cloves garlic
2 tbsp vinegar
1 tbsp olive oil
1/4 tsp salt
1/4 tsp pepper
1/4 cup shredded parmesan cheese
1/4 cup fresh basil

Recipe Directions for Red Pepper Cream Pasta

  1. Roast peppers in the oven, alternatively using two jars drained roasted red peppers.

  2. Roll up garlic heads with skin in foil and bake at 450 degrees for 15 minutes.

  3. Separate garlic pulp from the skin.

  4. Blend garlic pulp with peppers and small amount of pepper juice and add almonds, breadcrumbs, vinegar, olive oil, salt, and pepper.

  5. Cook pasta according to package directions until al dente.

  6. Warm the pepper cream in a pan on low flame and add a ladle of pasta water; mix.

  7. Saute diced tomatoes and add to pepper sauce.

  8. Drain pasta and finish cooking in the pepper sauce. Sprinkle with fresh basil and parmesan.
