A fast and easy breakfast, lunch or dinner.

Recipe Ingredients for Red Pepper and Cheese Fritatta

2 eggs
1 cup egg whites
1/4 teaspoon pepper
2 teaspoon olive oil
1 cup red bell pepper
1/4 cup green onions
3 21.0g (Laughing Cow) Garic & Herb-Wedges
1/4 cup Sargento reduced fat mozzarella shredded cheese
54 1/2 grams (Jennie-O Turkey Store) Lean Turkey Sausage Hot

Recipe Directions for Red Pepper and Cheese Fritatta

  1. Position rack in upper third of oven, preheat broiler.

  2. Whisk eggs, oregano, salt and pepper in medium bowl.

  3. Cut up red bell pepper in slices. (You can

  4. use bottled roasted red peppers or fresh peppers).

  5. Chop green onions.

  6. Crumble sausage and cook with vegables until onions are wilted on top of stove in non-stick pan.

  7. Pour egg mixture over vegetables and cook, lifting the edges ofthe frittata to allow the uncooked egg to flow underneath, until the bottom is golden, 2-3 minutes.

  8. Dot the top of the frittata with cheese, transfer pan to the oven and broil until puffy and lightly golden on top, 2-3 minutes. Let rest for about 3 minutes before serving. Serve hot or cold.

  9. Goat cheese (1/2 cup) can be substituted for the cheese.

  10. Andouille(chicken) or other sausage can be substituted for

  11. Jennie -O sausage. Great without sausage as well.

  12. To reduce cholesterol and salt you can make with one egg and 1 1/4 cup egg whites and leave out the turkey sausage.
