Red Pepper-Cashew Spread Recipe

Can be used on veggie tacos, fish tacos, as a lunch spread. Make sure to let cashews dry for 1/2 to 1 hr in strainer before you blend them. Otherwise it becomes too watery.

Recipe Ingredients for red pepper-cashew spread

1 cup cashews, soaked 3 hours
2 tbs tamari
1 tbs agave syrup
1 tbs apple cider vinegar
1 fruit+2-3/8"+dia lemon
1 cup red bell pepper, chopped
1 pinch sea salt, to taste
1 pinch cayenne pepper, to taste

Recipe Directions for red pepper-cashew spread

In vitamix blend first 5 ingrediants until fairly creamy, about 1 minute. Then add rest of the ingredients and blend until smooth. You may want to add the liquid first and then add the cashews slowly. I found you may need the bell peppers to add additional moister to blend the drier cashews.
