3 cup, cubes Squash, Winter, Butternut
2 Apple Apples
0.5 cup, chopped Onions
2 medium (approx 2-3/4" long, 2-1/2" dia) Peppers, Sweet, Red
2 cup Light

Recipe Directions for Red Pepper Butternut Squash Soup

  1. Roast the red peppers.

  2. Peel and chop the squash and apple. Add to a stock pot with chopped onion and broth. Bring to a boil. Cover and cook for 20 minutes. Add the peppers. Puree. serve.
