Delicious on its own or spread on good crusty bread. Very easy to make, but plan ahead because it cooks a while.

Recipe Ingredients for Red Onion Tian

1 red onion
1 red pepper
1 green pepper
2 ripe tomato
1/2 T. olive oil
1/2 tsp. thyme (dried, or 6 thyme branches)
6 garlic cloves, peeled and left whole
1 tsp. balsamic vinegar

Recipe Directions for Red Onion Tian

  1. Peel onion, leaving base intact, and cut into 8 wedges. Halve the peppers crosswise and lengthwise, remove seed and veins and cut into 1/2 wide pieces. Cut the tomato into 6 or 8 pieces.

  2. Brush a film of olive oil (or use olive oil spray) over a gratin dish, scatter the thyme over it, and arrange the vegetables (including garlic) in the dish. Brush the remaining oil over the vegetables and sason with salt and freshly ground black pepper. Cover with foil and bake in a preheated 350 degree oven for 1-1/2 hours. The vegetables will be very soft. Remove the dish from the oven and pour the liquid that has collected into a small saucepan. Add the vinegar, bring to a boil and reduce until thick and syrupy, then pour over vegetables.
