Delicious Garnish for beans or grain dishes. Maybe used to liven up a salad or tostada.

Recipe Ingredients for Red Onion Relish

1 medium thinly sliced Red onion
1/4 cup fresh lemon juice
1 teaspoon minced fresh ginger
2 teaspoons sugar (or other Sweetener)
1/2 teaspoon salt
1 tablespoon chopped fresh mint (optional)

Recipe Directions for Red Onion Relish

Combine ingredients in small bowl. Stir and refridgerate for at least 4 hours before serving. Best served cold or at room temperature after 12 hours of "pickling time".
