Recipe Ingredients for Red Onion Borscht (Mark Bittman)

4 tbsp butter
4 red onions
1 beet
40 ounces vegetable stock
2 ounces orange juice

Recipe Directions for Red Onion Borscht (Mark Bittman)

  1. Put butter in large deep pot over medium heat. When butter melted add sliced onions and grated beets, stirring occasionally until onions are soft about 30-45 minutes.

  2. Sprinkle with salt and pepper, add bay leaf, and orange juice. Add stock a minute later. Let simmer 15 minutes. You can serve with sour cream, chives, hard boiled eggs, or fingerling potatoes.
