Hearty Beef Stew using Bob's Red Mill Vegi Soup Mix

Recipe Ingredients for Red Mill Beef Vegetable Stew

1 1/2 cups Vegi Soup Mix
1 medium Onion, finely chopped
2 cloves Garlic, minced
2 tbsp Olive Oil
28 oz can diced or crushed Tomatoes
6 cups chicken broth
4 large Carrots, chopped into 1/2 chunks (3-5 carrots OK)
1 tbsp dried Basil
1 tbsp dried Oregano
1 tsp Sea Salt
2 tsp Pepper, Black
1 cup fresh spinach
0.84 lbs beef stew meat

Recipe Directions for Red Mill Beef Vegetable Stew

  1. Heat oil in a large pot on medium-high heat. Brown cubed beef and remove from oil. Set aside. Add onion and cook until onion is translucent, about 5 minutes, then add garlic and brown for one minute more.

  2. Add remaining ingredients (except spinach) to the pot (return beef to the pot) and bring to a low boil. Simmer, covered, for one hour, stirring occasionally. Add spinach during last 10 minutes of cooking.

  3. Adjust seasoning to taste--almost any combination of your favorite seasonings will work well in this soup. Refrigerate, covered, for about a week. This soup also freezes well. When reheating, add a little more water/broth to reach desired consistency.

  4. Serves 8.
