Red Lentils with Zucchinis Recipe

From vegetarian times july/aug 2010. I had to adapt the original recipe as it was created for making just one serving. Also, it called for drizzling balsamic vinegar on at the end, which I didn't try, but I think some lemon juice squeezed on would be better. Note: the sodium in this recipe is because I plugged in one of the only vegetable broth items in the database - either make your own low-sodium broth, buy low-sodium broth or use water to bring the sodum down.

Recipe Ingredients for Red Lentils with Zucchinis

1 cup red lentils
2 tsp sage, dried
1 1/2 tbsp mustard
1 tbsp olive oil
3 zucchinis, chopped
1 1/2 cups tomatoes, chopped
3 cloves garlic, minced
2 cups spinach
2 cups vegetable broth

Recipe Directions for Red Lentils with Zucchinis

  1. Combine lentils, sage, mustard and 1 1/2 cups broth in medium saucepan. Cover, and bring to a boil. Reduce heat to low, cover and simmer 8 to 10 minutes, or until lentils are tender. You may need to add more water or broth depending on whether the stew starts to dry out.

  2. Meanwhile, heat oil in skillet over medium-high heat. Add zucchini, tomato, garlic. Saute 3 to 4 minutes or until zucchini is tender but still crunchy. Add the spinach leaves until just wilted.

  3. Stir the zucchini/tomato mixture into the lentils and cook 2 minutes more.
