This recipe is modified from Family Vegetarian Cooking (Good Housekeeping) p.99. This recipe has been doubled for my family. **We enjoyed this with a little feta cheese sprinkled on top.**

Recipe Ingredients for Red Lentil and Vegetable Soup

2 T Olive Oil
8 medium carrots, peeled and chopped
1 l onion, chopped
2 t ground cumin
29 oz (2 cans) diced tomatoes
2 c red lentils, rinsed and picked through
2 c vegetable broth
4 c water
1/4 t ground black pepper
10 oz frozen spinach, squeeze drained

Recipe Directions for Red Lentil and Vegetable Soup

  1. In 4-quart saucepan, heat oil over medium heat until hot. Ad carrots and onion, and cook until tender and lightly browned, 6 to 8 minutes. Stir in cumin; cook 1 minute.

  2. Add tomatoes with their juice, lentils, broth, water, salt, and pepper; cover and heat to boiling over high heat. Reduce heat to low; cover and simmer until lentils are tender, 8-10 minutes.

  3. Just before serving, stir in spinach.
