Recipe Ingredients for Red Lentil and Vegetable Soup

1 tbl extra virgin olive oil
4 medium carrots
1 small onion
1 tsp ground cumin
14 1/2 oz canned diced tomatoes
14 1/2 oz reduce fat low sodium chicken broth
1 cup dried red lentils
1/4 tsp salt
1/8 tsp ground black pepper
5 oz baby spinach

Recipe Directions for Red Lentil and Vegetable Soup

  1. In a 4 qt saucepan, heat oil on medium until hot.

  2. Add carrots and onion

  3. Cook 6-8 minutes or until lightly browned and tender.

  4. Stir in cumin

  5. Cook 1 minute

  6. Add tomatoes, broth, lentils, 2 cups water, salt and pepper

  7. Cover and heat to boiling on high

  8. Reduce heat to low and simmer, covered, 8 - 10 minutes or until lentils are tender

  9. Stir in spinach
