A light version of my mom's recipe

Recipe Ingredients for Red Lentil Tomato soup

0.5 cup Red Lentils
1/4 tsp Sea Salt
3 clove Garlic
1 cup, chopped Onions
1 cup, diced Celery
1 cup, chopped Carrots
41 1/2 grams Tomato Roma
2 tbsp Tomato Paste
1 tbsp Olive Oil

Recipe Directions for Red Lentil Tomato soup

Place the lentils, salt and 3 cups of water in a pot. Bring to a simmer and cook, partially covered for 20-30 minutes. In another pot, add the oil and in medium heat cook onions until soft. Then add tomatoes chopped and let it stand until it starts boiling. Then add the rest of the vegetables and the boiled lentils with their liquid and the paste with as much water as you want (depending on how much of a soup you want it to be). Just before serving stir in vinegar and sour cream. Enjoy!
