Yummy vegetarian stew made with mostly tomato juice and lentils.

Recipe Ingredients for Red Lentil Stew

1 cup onion
2 celery stalks
3 carrots
5 cups tomato juice
1 tsp poultry seasoning
1 cup red lentils
1/2 tsp sea salt

Recipe Directions for Red Lentil Stew

Saute onions, celery and carrots. Add tomato juice and seasonings. Simmer for 20 minutes. Add red lentils. Simmer for 15 more minutes.
