Hearty, filling, protein-packed pea soup for the crock pot. Hands-off overnight cooking, better to wake up to than a hot pot of coffee.

Recipe Ingredients for Red Lentil & Split Pea Soup (veg)

1 cup dry Split Peas
1 cup dry Split Peas
1 cup dry Lentils
1 large Onions
1 large whole (3" dia) Tomatoes, Red, Ripe
1/2 cup Wild Rice
1 cup Spinach
3 clove Garlic

Recipe Directions for Red Lentil & Split Pea Soup (veg)

  1. Combine peas, lentils and rice in the bottom of a large crock pot.

  2. Chop tomato and onions into 1 cm cubes

  3. Shred spinach

  4. Finely chop garlic

  5. Layer vegetables and garlic on top of the pea/lentil mixture

  6. Season with your choice of spices - I personally favour 1 tsp black pepper, 1 tsp chili pepper, 1 tsp dry basil

  7. Carefully pour between 6 and 8 cups of water overtop

  8. Let cook on 'low' overnight, or until all ingredients have stewed into a smooth mixture

  9. Adjust seasoning to taste

  10. Yields 8-10 servings
