I don't remember where I got the recipe. I altered the recipe slightly to fit what I had in the pantry.

Recipe Ingredients for Red Lentil Soup

1 small sweet potato
1/2 small onion
1 small carrot
1 small turnip
1/2 apple
1 tablespoon butter
3 tablespoons red lentils
1 1/2 cups vegetable broth
1/8 teaspoon black pepper
1/8 teaspoon chili powder
1/8 teaspoon cumin
1 tablespoon fresh ginger

Recipe Directions for Red Lentil Soup

  1. Chop veggies and apple. Mince or grate ginger.

  2. Melt butter in pan over medium-high. Saute veggies and apple until onion is transparent.

  3. Add ginger, broth, lentils, and spices. Bring to boil. Reduce heat and simmer 30 minutes.

  4. Puree in blender. Serve with a dollop of yogurt if desired.

  5. May substitute margarine for butter if you want the dish to be vegan or parve.
