vegetarian red lentil soup. Batch yields 12 cups. Serving is 1 1 /4 cup. I garnish with yogurt and cilantrol

Recipe Ingredients for red lentil soup

2 cups dried red lentils
16 ounces canned tomatoes
2 tbs extra virgin olive oil
2 roasted red peppers
1 onion, diced
3 cloves garlic
1 tsp dried ginger
1 tsp curry powder
1 tsp coriander powder
1 salt to taste

Recipe Directions for red lentil soup

  1. chop onions. saute onions with olive oil. add crushed garlic cloves. sprinkle with dried ginger.

  2. rinse red lentils. add to onion mix. add water to cover.

  3. add roasted red pepper and canned tomatoes.

  4. add curry and coriander.

  5. cover and simmer until lentils are tender. blend with immersion blender or food processer.
