Savory Mediterranean soup with an edge to the flavor

Recipe Ingredients for Red Lentil Soup


Saute:
1 medium onion
1/2 cup minced garlic
1 cup chopped celery
1 tbs olive oil

Add:
2 cups red lentils
6 cups water
14 1/2 oz stewed tomatoes
1 tbs cumin
1/2 tsp red pepper flakes
1/2 tsp fennel, crushed

Add:
1/2 cup chopped fresh cilantro
1/2 cup lemon juice

Recipe Directions for Red Lentil Soup

Saute ingredients in first group, then add second group and cook until tender. Add last group of ingredients and serve.
