Great vegetarian soup, has lots of vegetables and is very filling.

Recipe Ingredients for Red Lentil Soup

1 lb dried red lentils
2 cups chicken broth
10 cups water
2 tbsp salt
2 tbsp curry powder
2 tbsp garam masala powder
1 medium green bell pepper
1 yellow onion
3 cloves garlic
2 medium carrots
2 stalks of celery
2 tbsp tomato paste
1 large sweet potato
3 small white potatoes
4 tbsp olive oil
2 cups chopped swiss chard

Recipe Directions for Red Lentil Soup

  1. chop all veggies

  2. saute veggies in oil and add curry powders

  3. add tomato paste and chicken broth, stir until well incorporated

  4. rinse off lentils

  5. add lentils and water

  6. bring to boil and then bring down to simmer for 20-30 min until the potatoes and carrots are tender

  7. add salt at the end to make sure it has the right amount
