Recipe Ingredients for Red Lentil Soup

2 med onions, chopped fine
4 cloves garlic
2 tsp mustard seed
1/2 tsp ground cumin
1/2 tsp ground coriander
1/2 tsp turmeric
1 tsp pepper, ground
5 cups broth
2 cups red lentils
14 oz coconut milk
1 tbsp tomato paste
1 tomato, diced
2 tbsp lime juice

Recipe Directions for Red Lentil Soup

  1. Saute onions until starting to brown, then add garlic.

  2. Add spices, saute for one minute.

  3. Add lentils, coconut milk, 1/2 broth, tomato paste.

  4. Simmer 30-45 minutes, add more broth if needed.

  5. Add lime juice when done, and salt and pepper to taste.
