This is great - and you can freeze it.

Recipe Ingredients for Red Lentil Soup

3 tbs olive oil
1 onion, chopped
3 cloves garlic, minced
1 tbs tomato paste
1 tsp cumin
1/4 tsp kosher salt
1/4 tsp black pepper
1/8 tsp chili powder
4 c chicken stock
1 c red lentils
1 carrot, diced
3 tbs cilantro, chopped
1 tbs lemon juice

Recipe Directions for Red Lentil Soup

  1. In a large pot, heat the oil over high heat until hot and shimmery. Add onion and garlic and sautee until just starting to brown, about 4 minutes. Stir in tomato paste, cumin, salt, pepper and chili powder, and saute for 2 minutes. Add broth, 2 cups of water, lentils and carrot. Bring to a simmer, then partially cover pot and heat to medium low. simmer until lentils are soft, about 30 minutes. Add salt if necessary.

  2. Puree half of the soup, then add the puree back to the pot. It will be somewhat chunky. When ready to serve, add cilantro and lemon juice (both optional). You can also drizzle a little olive oil on top if you like.
