A hearty soup that is not too spicy and not too bland -- just right! I actually used 6 cups of reduced sodium chicken broth, but put 3 in the recipe to get the sodium content right. This soup would be great with a little ham mixed in as well!

Recipe Ingredients for Red Lentil Soup

1 cup dry red lentils
1/4 cup dry brown rice
1/8 teaspoon red pepper
1 tablespoon dried onion
1/4 teaspoon garlic powder
3 cups chicken broth

Recipe Directions for Red Lentil Soup

  1. Bring 6 cups reduced sodium chicken broth to a boil.

  2. Add lentils, rice and seasonings.

  3. Simmer for one hour.

  4. Enjoy!
