1 large onion, cubed
4 cloves garlic, minced
14 1/2 oz diced tomatoes
2/3 cup red lentils, dry
2 1/2 cups vegetable broth, low sodium
1 tbl rosemary, minced
1/4 tsp red pepper flakes
1/3 cup lemon juice, (fresh)
1 tsp sea salt
1/2 tsp black pepper, freshly ground
1 tsp lemon zest, finely chopped

Recipe Directions for Red Lentil Sauce (Milennium Cafe)

In a medium saucepan, cook the onion, garlic, and tomatoes over medium-high heat for 10 minutes, or until onions start to often and tomatoes break down. Add the lentils, then the stock, rosemary, and red pepper flakes. Cover and simmer for 20 minutes or until lentils are soft. Stir in lemon juice, zest, salt and pepper.
