Spicy Red lentil soup with added vegetables

Recipe Ingredients for Red lentil Sambar

3 cups dried red lentils
1 tbsp olive oil
1 medium onion
3 medium carrots
1 small green bell pepper
1 medium red or yellow bell pepper
1 jalapeno pepper
1 tbsp ginger root
4 cloves garlic
1 tbsp black mustard seed
1 tbsp curry powder
1 tsp cumin
4 cups chicken stock
4 cups water
2 tbsp tamarind paste

Recipe Directions for Red lentil Sambar

  1. Shred carrots and beets

  2. chop onion, ginger, garlic and bell peppers finely

  3. add oil to pot and fry all the obove ingredients starting with onion, garlic and ginger, then add peppers, and carrots

  4. and set aside around perimeter of pot

  5. put spices in the center of the pot and toast for about 30 seconds

  6. add chicken stock and water and bring to a boil

  7. rinse red lentils and add to pot

  8. Simmer for about an hour or until lentils are soft

  9. Do not mix in tamarind until the very end. Salt to taste. I usually find store bought stocks have enough salt so no further salt is required.
