Red Lentil Rice Patties with Cilantro Sauce

Recipe Ingredients for Red Lentil & Rice Patties

1 cup Indian Basmati Rice
4 oz Lentils
4 cup (8 fl oz) Water
0.5 tsp Turmeric, Ground
1 tsp Sea Salt
2 tbsp Coconut Oil
1 tsp Cumin Seed
2 cup, chopped Onions
0.25 tsp Pepper, Red Or Cayenne
0.25 cup Arrowroot Flour

Recipe Directions for Red Lentil & Rice Patties

  1. Place rice and lentils in a medium saucepand with water, tumeric and salt. Cover, bring to a boil, reduce the heat and simmer, without stirring for another 20 to 25 minutes or until the water is absorbed.

  2. While the rice and the lentils are cooking, heat 2 tbs. of oil in a medium skillet over medium hight heat. Add the cumin seeds and cook for 1 minute, stirring frequently. Add the onions and lower heat to medium, cook for about 10 minutes or until onions are golden. Add the red pepper flakes, stir and set aside.

  3. When rice and lentils are done, place them in a medium bowl and add the onion mixture. Combine well and let stand until cool, about 20 minutes.

  4. When the mixture has cooled, spread the arrowroot on a large plate. Form the lentil-rice mixture into 8 patties. Evenly coat each patty on both sides with the arrowroot and set aside until ready to cook.

  5. Heat 2 tsp. of VCO in large skillet over medium high heat. Cook 4 patties until golden, about 2 minutes. Turn and cook the other side, 2 minutes or until golden.

  6. Remove to a plate and keep warm.

  7. Heat remaining 2tsp VCO and cook remaining patties.
