Recipe Ingredients for Red lentil rice cakes

0.5 cup Red Lentils
0.5 cup White Basmati Rice
1 tbsp Olive Oil
0.5 cup, chopped Peppers, Sweet, Red
0.5 cup chopped Red Onion
0.5 tsp Fennel Seed
2 serving Garlic Cloves
0.75 cup, shredded Mozzarella, Part Skim Milk, Low Moisture Cheese
1/4 cup Breadcrumbs
0.5 tsp Seasoned Salt
0.5 tsp Pepper, Black
2 large Egg, White

Recipe Directions for Red lentil rice cakes

  1. Cook lentils and rice separately according to cooking directions.

  2. Cook red pepper, onion, garlic fennel over med-high heat, with 1tsp oil.

  3. Combine all ingredients in large bowl.

  4. Heat 1tsp oil in skillet. Spoon 1/3 cup mixture into patty form and cook 5-7 minutes until browned, flip, cook another 5-10 minutes.

  5. Serve with Homemade salsa.
