curried red lentils with coconut milk

Recipe Ingredients for Red Lentil

1 cup red lentils
14 oz chicken stock
1 onion
1 tablespoon olive oil
1/2 cup coconut milk
14 oz diced tomatoes
1/2 teaspoon turmeric
2 cloves garlic
2 teaspoons ground cumin
2 teaspoon coriander seed

Recipe Directions for Red Lentil

  1. disolve turmeric in stock, add lentils bring to boil, then simmer covereduntil the lentils are tender

  2. saute onion then add garlic cumin and coriander. stir theis mixture into the cooking lentils and then add the tomato. add the cocnut milk and stir well.
