lentil and mushroom stew - this is very thick so add more water if you like a thinner consistency

Recipe Ingredients for Red lentil and mushroom stew

2 cups onion, chopped
2 cups red pepper, chopped
2 cups zucchini, chopped
28 oz tomatoes, chrushed
1 lb red lentils, dry
1 lb mushrooms, chopped
1 tsp thyme, ground
1 tsp rosemary, dried, ground in mortar

Recipe Directions for Red lentil and mushroom stew

  1. saute onion & red pepper in stock pot until tender

  2. add crushed tomatoes and zucchini

  3. cook on low heat

  4. saute mushrooms with seasonings and 1/4 cup sauteed onion, pepper & a little water;

  5. cover & cook about 5-10 minutes

  6. add 3 cups water to stock pot and 1 lb rinsed dried lentils

  7. add mushroom mixture

  8. bring to boil, cover & simmer on low for 20 minutes

  9. serve over brown rice or other grain side dish
