Recipe Ingredients for Red Lentil Lemon Soup

2 medium onions
2 cloves garlic
1/2 teaspoon salt
1 tablespoon walnut oil
1 teaspoon ground cumin
1 cup dried red lentils
5 cups of water
1 tablespoon fresh lemon juice

Recipe Directions for Red Lentil Lemon Soup

  1. Chop the onions into medium pieces. Chop the garlic. On a cutting board, mash the garlic into the salt with the side of a knife blade to make a paste.

  2. In a 3- to 4-quart soup pot, heat the oil over medium heat. Add the onions and sauté until translucent, about 3 to 4 minutes. Add the garlic and cumin and cook until the onion is golden, about 6 to 7 minutes longer.

  3. Meanwhile, pick over the red lentils carefully, discarding any stones. Rinse. Add the lentils, stock or water to the onions and bring to a boil, skimming off the foam, if necessary. Add the bay leaf, lemon rind and reduce heat. Cover and simmer for 25 minutes.

  4. Discard the bay leaf and lemon rind. Add the lemon juice and stir. Pour into bowls and garnish each with a slice of lemon.
