Indian style grain and soft lentils.

Recipe Ingredients for Red lentil kichadi

1/2 cup red lentils
1/2 cup quinoa
1/2 sweet onion, diced
14 oz tomatoes, diced
1 tsp garlic
2 tbsp canola oil
1/2 tsp turmeric
1 tsp salt
1/8 tsp cayenne
1/2 tsp cumin
1/4 tsp black mustard seeds
1/2 tsp coriander
1/2 tsp garam masala

Recipe Directions for Red lentil kichadi

  1. In small saucepan, combine lentils, quinoa, turmeric, cayenne and 1/2 tsp salt. Cover with 1 1/2 cups water and bring to a boil, then turn heat to low and cook 30 minutes, covered.

  2. Heat oil in large, heavy saucepan. When hot, add 1/4 tsp cumin and black mustard seeds.

  3. When seeds pop, add onions and saute about 3 minutes.

  4. Add tomatoes, garlic, and remaining spices and saute about 6 minutes.

  5. Stir in lentil & quinoa mixture. Cover and heat through, about 5 minutes.

  6. Serve plain or stir in steamed vegetables.
