A lentil curry dish with potatoes.

Recipe Ingredients for Red Lentil Curry

1 cup red lentils
1/8 cup quinoa
2 1/2 cups water
1 tsp olive oil
1 onion, diced
2 cloves garlic, minced
1 tbls ginger, minced
1 tomato, diced
1 tbls jalapeno, diced
1 medium potato, diced
2 tbls curry powder
2 tbls cilantro, chopped

Recipe Directions for Red Lentil Curry

Saute onion, garlic, ginger & tomatoes in olive oil until onions are starting to brown and tomato is breaking down. Add jalapeno, curry powder, tumeric powder,cilantor and potato. Cook for 5 minutes to blend the spices. Add water, quinoa & lentils and cook until lentils start to break down and quinoa is tender. Serve with a dollop of greek fage.
