about 1 cup serving of lentils. Serve over brown rice topped with plain yogurt or sour cream and cilantro.

Recipe Ingredients for Red Lentil Curry

2 cups red lentils
1 large onion, diced
1 tablespoon vegetable oil
2 tablespoons curry paste
1 tablespoon curry powder
1 teaspoon ground turmeric
1 teaspoon ground cumin
1 teaspoon chili powder
1 teaspoon salt
1 teaspoon white sugar
1 teaspoon minced garlic
1 teaspoon ginger root, minced
14 1/4 ounce tomato puree

Recipe Directions for Red Lentil Curry

  1. rinse lentils,

  2. Carmelize onions

  3. add spices and mix well, heat for 1-2 minutes, add tomatoes and simmer 2 minutes then add to lentils.

  4. I added an extra 14 oz can of crushed tomatoes to decrease the heat.
