Wasn't super flavorful, maybe someone has a suggestion... I used lite coconut milk

Recipe Ingredients for Red Lentil Coconut Curry

2 cup Lentils Red Organic
0.7 cup, chopped Carrots
0.7 cup, diced Celery
1 cup, chopped Onions
1.5 medium Russet Potato
24 fl oz Lite
4 tbsp Vegetable Oil, Canola
0.25 oz Ginger Root
2 tsp Sea Salt
1 tbsp Curry Powder

Recipe Directions for Red Lentil Coconut Curry

  1. Use sweet potato instead of regular for much more flavor.

  2. Saute everything except the lentils, c milk and water. Add those after a bit, bring to a boil, then stir, cover and simmer 20 minutes, or until the lentils are done. Use 3 or so cups water, enough for the lentils to soak up. serve over basmati rice.
