Sweet soup with Red Lentils and Apricots - very healthy. Really nice with crusty bread!

Recipe Ingredients for Red Lentil & Apricot soup

1 cup red lentils
1 onion, diced
1 teaspoon oil
1 Garlic clove
4 cups (Waitrose) Stock - Vegetable
1 teaspoon ginger
1/2 teaspoon turmeric
1 teaspoon cumin seeds, ground
1 teaspoon coriander seeds, ground
10 dried apricots
1 Lemon juice or lemon salt, to taste
1 salt and pepper
1 cup of coriander

Recipe Directions for Red Lentil & Apricot soup

  1. Wash and drain lentils.

  2. Fry onion, garlic and ginger with oil in a large saucepan until onions are translucent.

  3. Add dry spices.

  4. Add lentils, apricots and water or stock to pan, bring to the boil, then simmer for approximately 30-40 minutes.

  5. Season to taste.

  6. Liquidize.

  7. Garnish with coriander when serving.
