A very fast, easy, and tasty Moosewood recipe, from the Cooks at Home cookbook, providing compete protein with the bulgar and beans. Could adapt it to decrease or eliminate the olive oil to lower calories.

Recipe Ingredients for Red, Gold, Black, and Green Chili

1/2 cup bulgur wheat
1/2 cup water
28 ounces tomatoes, diced, undrained
3 tablespoons olive oil
3 cups onions, chopped
3 garlic cloves, minced
1 teaspoon cumin
1 teaspoon chili powder
1 tablespoon Tabasco
2 green peppers, chopped
14 ounces black beans, drained
14 ounces red kidney beans, drained
2 cups corn, frozen

Recipe Directions for Red, Gold, Black, and Green Chili

  1. Place bulgur, hot water, and about a cup of the juice from the tomatoes in a small saucepan. Cover and bring to a boil on high heat, then lower the heat and simmer gently.

  2. While the bulgur cooks, heat the olive oil in a large saucepan. Sauté the onions, garlic, cumin, chili powder and hot sauce until are soft. Stir in the bell peppers and sauté them for 2-3 minutes more. Add the tomatoes and beans and heat thoroughly or simmer until ready to eat. Add the corn and bulgur with its liquid. Cover and simmer for the favors to meld. Add salt to taste.

  3. Serve plain or with fresh cilantro.
