delicious veggie alternative to shepherd's pie

Recipe Ingredients for red dragon pie

150 g adzuki beans
1 teaspoon sunflower oil
1 onion
2 cloves garlic
8 ounce carrots
2 tablespoon soy sauce
2 tablespoon tomato puree
1 pinch of mixed herbs
2 teaspoons Bouillon
1 pound potatoes

Recipe Directions for red dragon pie

  1. soak beans in 2 pints water overnight (if dry)

  2. boil in 2 pints of water - bring to boil then simmer for an hour

  3. drain beans but keep stock

  4. fry onion and garlic then add carrots too

  5. add in beans

  6. mix soy sauce, tomato puree, herbs and stock

  7. pour over bean mix

  8. boiler then simmer for 30 minutes

  9. add more liquid if necessary

  10. put mashed potatoes on top and put under grill until browned on top
