Red curry tofu and snow peas with peanut sauce

Recipe Ingredients for Red curry tofu and snow peas with peanut sauce

1 onion
1/2 head bok choy
1/2 bunch broccoli
2 cups snow peas
12 oz tofu
1 garlic clove
2 tsp vegetable oil
3 tbsp peanut butter
1/3 cup hot water
1 tsp red curry paste
1 tsp soy sauce
1 tsp corn starch
1 tsp sriracha

Recipe Directions for Red curry tofu and snow peas with peanut sauce

  1. Fry tofu in 1 tsp oil. Set aside

  2. Steam broccoli florets for 3 minuts. Set aside

  3. Stir fry onion, bok choy. Add garlic.

  4. Fry red curry paste with vegetables until coated. Add tofu and snow peas.

  5. Mix peanut butter and water with soy and corn starch. Heat pan to high and add sauce. Stir until thickened and vegetables are coated.
