Another off the top of my head - started with spinach & onions in the pan & turned into a curry

Recipe Ingredients for Red Curry Tofu & Greens

1 medium (2-1/2" dia) Onions
2 1tsp Olive Oil
1 tbsp Garlic Paste
1 tsp Ginger Paste
2 cup Frozen Collard Greens
1 can Mushrooms
15 oz Diced Tomatoes No Salt Added
12 oz Silken Tofu
1/2 cup Basmati Brown Rice
0.33 cup Coconut Milk
2 cup water
2 tbsp Red Curry Paste

Recipe Directions for Red Curry Tofu & Greens

  1. sautee onion, garlic, ginger and collards till soft

  2. add mushrooms and dry rices sautee a bit add tomatoes and 2 cups water, curry paste, and diced tofu. Simmer till rice is tender
