1 tbsp thai curry paste
3 tbsp lime juice
2 tbsp thai fish sauce
8 oz straw mushroom
7 oz baby corn
8 oz water chestnuts
1 cup edamame
16 oz jumbo shrimp
1 1/2 cups uncooked jasmine rice

Recipe Directions for Red Curry Shrimp over Jasmine Rice

  1. add coconut milk, curry paste, lime juice and fish sauce to wok and simmer until noticeably thickened.

  2. add vegetables and simmer for 3 minutes.

  3. add shrimp and simmer for 2 minutes.

  4. serve over cooked jasmine rice.
