Recipe Ingredients for Red Curry Salmon Chowder

1 tablespoon olive oil
1 small red onion
2 cups sliced mushrooms
1 tablespoon Thai red curry paste
1 tablespoon grated fresh ginger
4 cloves garlic
1 small red pepper
14 ounce Lite Coconut Milk
16 ounces vegetable broth
2 teaspoons fish sauce
2 teaspoons honey
1 lb salmon fillet
1 lb bok choy
1/2 cup basil leaves
1/2 cup cilantro leaves

Recipe Directions for Red Curry Salmon Chowder

  1. heat oil and cook onion and mushrooms for 3 to 5 minutes until just softened.

  2. stir in curry paste, ginger, garlic and sliced red pepper; cook for 1 minute, stirring constantly.

  3. stir in coconut milk, stock, fish sauce and honey; bring to a boil and add salmon and bok choy.

  4. reduce heat to low and simmer, covered for 3 to 6 minutes (depending on how thick the salmon is) until bok choy is tender.

  5. ladle into bowls, sprinkle with thinly sliced basil and cilantro and serve with LIME WEDGES on the side.
