Recipe Ingredients for red-curry roasted salmon and buttered lime rice

1/2 lb salmon
1/2 tbsp olive oil
1/2 tbsp lime juice
1 tsp red curry paste
8 oz green beans
1 red bell pepper
1 tbsp mint
1 tbsp basil
3/4 cup rice
3/4 tbsp butter
1 tsp lime juice
1/4 tsp salt

Recipe Directions for red-curry roasted salmon and buttered lime rice

  1. For the Salmon:Preheat the oven to 400. Spray a heavy, large baking sheet with cooking spray. Place fish on half of the sheet. Whisk 1 tablespoon of the vegetable oil, the lime juice, and the curry pasted in a small bowl. Spread the curry mixture over the fish. Toss the green beans and the bell pepper in a medium bowl with the the rest of the oil (or just toss it on the baking sheet, like I did). Arrange the green beans and the peppers on the other half of the baking sheet and sprinkle with salt.

  2. Roast until the fish is just opaque in the center and the vegetables are tender, but still crisp, about 12 minutes. Plate the fish, and then toss the vegetables with the cooking juices in the pan with the mint and basil, serve.

  3. For the Rice:

  4. Rinse the rice under cold running water and let sit to air dry for an hour or more in a fine mesh strainer.

  5. Heat the butter in a small saucepan over medium heat. As soon as the butter turns frothy, and before it begins to burn, add the rice and stir fry for 2 minutes.

  6. Add the water and lime juice, and stir in the salt. Raise the heat and bring to a boil. Immediately turn the heat down to its lowest setting, cover, and let the rice cook undisturbed for 15 minutes. Remove the lid and turn off the heat. If there is any unabsorbed water in the pan, let it sit for a couple of minutes on the burner as it cools.
