Recipe Ingredients for Red Curry Pumpkin Soup

1 tbsp butter
3/4 cup onion, chopped
3 cloves garlic, chopped
4 tsp ginger, chopped
2 cups pumpkin, chopped
2 1/2 cups butternut squash, chopped
14 oz coconut milk
4 tbsp red curry paste
1 tsp salt

Recipe Directions for Red Curry Pumpkin Soup

  1. Heat butter in a soup pot over medium heat.

  2. Throw in the onion once the foam subsides, saute for 5 min.

  3. Put in pumpkin and butternut squash, along with about 2 1/2 cups of water and the garlic and ginger.

  4. Bring to a boil.

  5. Boil until squash is tender (15 min?).

  6. Add coconut milk, salt and red curry paste, stir and simmer for several minutes.

  7. Take off the heat and blend with hand blender.
