spicey and sweet great over brown rice

Recipe Ingredients for red curry chicken

1 cup peas
1 cup red peppers, sliced
3 tbsps red curry paste
2 tbsps fish sauce
2 tbsps brown sugar
2 cups chicken, chopped
14 oz lite coconut milk

Recipe Directions for red curry chicken

  1. combine coconut milk and red curry paste bring to a slow boil

  2. add fish sauce and brown sugar

  3. add chicken cook until chicken starts to turn white then add veggies

  4. cook until chicken is fully cooked all the way through

  5. serve over rice(preferrably brown as is healthier)

  6. *can add additional red curry paste to make as spicey as you like
