Red curry sauce, with Veggies over rice noodles

Recipe Ingredients for Red Curry Chicken

1/2 lb Chicken
1/2 red pepper
1 onion
1/2 cup green beans
1 tbs olive oil
14 oz light coconut milk
1 tbs red curry paste
1 tbs garlic
1 tsp black pepper
8 oz rice noodles

Recipe Directions for Red Curry Chicken

  1. In a saute pan heat 1/2 tbs olive oil and garlic. When hot saute chicken until golden brown.

  2. While chicken is cooking in another pan wisk coconut milk and red curry paste over medium heat. Bring to a boil then simmer until sauce thickens.

  3. When chicken is cooked place in a bowl and hold to the side. Add the rest of the oil to pan and saute veggies until almost done.

  4. When sauce is thick and veggies are almost cooked add chicken, sauce into the pan with the veggies. cook on low for 5 min.

  5. In another pan cook rice noodles as you would spagetti. ( I usually do this while everything else is cooking) strain and set aside while until chicken, sauce and veggies finish cooking.
