Recipe Ingredients for Red Curry with Beef

8 oz Beef, Tenderloin
3 1tsp Olive Oil
4 tbsp Red Curry Paste
1 cup Coconut Milk
1 cup Coconut Milk
4 cup (1" cubes) Eggplant
1 cup (1/2" slices) Bamboo Shoots
2 tbsp Fish Sauce
1 cup leaves, whole Basil, Fresh
2 pepper Peppers, Hot Chili, Red

Recipe Directions for Red Curry with Beef

  1. Start frying beef in a separate pan

  2. Fry curry paste in oil for 2 minutes

  3. Add thick coconut milk, cook until boiling

  4. Add eggplant, bamboo and remaining coconut milk

  5. Simmer 4 minutes

  6. Add fish sauce, chilies and 1/4 cup lime zest

  7. Add cooked beef

  8. Cook for 2 minutes

  9. Add basil leaves

  10. Serve
