Recipe Ingredients for Red Carpet Chicken

1 egg
1/2 cup Italian-flavored bread crumbs
2 boneless, skinless chicken breast,each halved, (1 to 1-1/4 pounds total), pounded to 1/4-inch thickness
1/4 teaspoon salt
1/8 teaspoon black pepper
4 ounces Swiss cheese (4 sq.slices - light)
4 slices (1/4 pound) deli ham
1 Nonstick cooking spray

Recipe Directions for Red Carpet Chicken

  1. Preheat the oven to 325F. Coat a 7" x 11" baking dish with nonstick cooking spray.

  2. Beat the egg in a shallow dish. Place the bread crumbs in another shallow dish.

  3. Season the chicken with the salt and pepper. Place 1 cheese slice and 1 ham slice on top of each chicken breast. Roll up and secure each breast with a toothpick; dip in the beaten egg then in the bread crumbs, coating completely. Place the chicken roll-ups in the baking dish then coat lightly with nonstick cooking spray.

  4. Bake for 30 to 35 minutes, or until no pink remains in the chicken and the coating is golden. Remove the toothpicks before serving.
