Recipe Ingredients for Red Bell Pepper and Mushroom Sauté

1 tsp. unsalted butter or margarine
1 large red bell pepper, cored, seeded and cut into 1 inch squares
1 large yellow or green bell pepper, cored, seeded and cut into 1 inch squares
250 g mushrooms
2 tbsp. tarragon

Recipe Directions for Red Bell Pepper and Mushroom Sauté

  1. Prep: 10 min, Cook: 10 min.

  2. 1 tsp. unsalted butter or margarine

  3. 1 large red bell pepper, cored, seeded and cut into 1 inch squares

  4. 1 large yellow or green bell pepper, cored, seeded and cut into 1 inch squares

  5. 250g mushrooms

  6. 2 tbsp. tarragon, or 2 Tbs. fresh, chopped or dry

  7. Melt butter in a heavy nonstick skillet over medium heat. Sauté bell peppers and mushrooms 7-8 minutes, or until vegetables are tender. Season with salt and pepper to taste. Stir in tarragon and cook another minute.
